Great option for those short on time but wanting flavour! Packed full of goodness with chickpeas, tomatoes, peppers, mushrooms and spinach this is a vegetarian option but you could add any leftover roast chicken. This takes very little prep, especially if you decided to go for ready chopped frozen vegetables. As always, make extra and save yourself portion for lunch the next day!
Mango and raspberries are always in my freezer. Fab ingredients for smoothies, but in the summer we make ice lollies and iced desserts! Based on a classic mango lassi recipe, the cardamom brings these flavours together beautifully. This recipe is made using Greek yoghurt but also works with non-dairy alternatives such as coconut milk/cream or almond milk. Once the ice moulds are full, enjoy the leftover as a smoothie.
At the Health Boost we are not vegetarian but we encourage everyone to increase the consumption of mostly plant based meals a couple of days a week if possible. With some pulses providing some good quality protein such as the quinoa and chickpeas in this salad and the added halloumi we make sure to provide a balance of all macro nutrients. We also get asked often what to do with aubergines as they are a good source of fibre, vitamins and minerals and low in calories for those counting.
Can you resist these? Really simple to make, but also, amazingly healthy and nutritious. What’s not to like? Children will love to get involved and they can customise with their favourites. You can substitute with blueberries or blackberries - or any of your favourite berries. You can use frozen berries too. A colourful snack or healthy treat perfect to share (or not!).

A fresh and zingy curry - perfect now that there's a chill in the air. It's packed full of ginger and garlic, both great anti-inflammatory foods that will help if you are feeling below par. I often just serve this on it's own, but you could always add some chickpeas or other beans. Can be served on its own, with brown rice or cauliflower-rice. You can substitute the butternut squash with pumpkin if you prefer.

Can be made ahead and reheated and leftovers are perfect for lunch the next day. Delicious served on its own, but if you are super hungry then serve with brown rice, quinoa or some cauliflower rice. Don't be put off by the long list of ingredients - the spice paste is ever so easy to make!
This is perfect for introducing your children to spices. It's not that hot, so I add a couple of dried chillies when I cook it for some extra heat. If your children aren't used to spices then don't add any chillies the first time you make it and then introduce gradually. This is one of our go-to dishes. It’s simple to make, and can be easily doubled/tripled to store away in the freezer. I have used red pepper and courgette in the recipe below, but it goes well with any vegetables that you have to hand such as aubergines, yellow peppers or leeks. Sometimes I stir through a bag of baby spinach and a tin of red kidney beans at the end, especially if I’m not serving with rice. This is delicious with brown rice, cauliflower rice, mashed potato or mashed sweet potato.
Inspired by nature. Spring is on everyone's mind the minute the golden daffodils appear in gardens and across the countryside in the UK, and it also inspired this mango smoothie. Although not grown in this country, and always imported, mango is available all year round and is a great staple fruit to keep in your freezer alongside frozen berries ans frozen spinach.
