sunny spring smoothie
Ingredients

Inspired by nature. Spring is on everyone's mind the minute the golden daffodils appear in gardens and across the countryside in the UK, and it also inspired this mango smoothie. Although not grown in this country, and always imported, mango is available all year round and is a great staple fruit to keep in your freezer alongside frozen berries ans frozen spinach.
250g mango chunks (frozen or fresh)
1/2 cup kefir (or 3tbsp greek yoghurt)
1/2 cup milk of choice (we like almond milk for extra protein)
Coconut water filled up to the max line of a nutribullet
drop of vanilla extract (optional)
If having as breakfast, add 1-2 scoops of protein powder. You may need to increase coconut water amount slightly.
Method
In a nutribullet, or equivalent, add all the ingredients and blend until smooth. Enjoy!

This is such a quick and easy recipe that all of our kids are well rehearsed at making their own! This means getting them involved in being capable of preparing their own delicious, nutritious food as well as making fruit choices – swap the mango for berries, banana... or a combination!
You can also add some sneaky frozen spinach!
