raspberry and pistachio frozen yoghurt bark

Makes enough for 8-12 to share
Can you resist these? Really simple to make, but also, amazingly healthy and nutritious. What’s not to like? Children will love to get involved and they can customise with their favourites. You can substitute with blueberries or blackberries - or any of your favourite berries. You can use frozen berries too. A colourful snack or healthy treat perfect to share (or not!).
400g plain Greek yoghurt
3 tablespoons maple syrup or honey
2 tablespoons ground almonds
1 teaspoon vanilla extract
100g fresh raspberries, mashed with a fork
Large handful chopped pistachios
Method
Prep time: 10mins
Freeze time: 3-4hours
Line a rimmed baking sheet or brownie tin with parchment paper.
In a medium bowl combine yoghurt, maple syrup (or honey) ground almonds and vanilla.
Spread on the prepared baking sheet.
Dot the mashed raspberries all over the surface and swirl with a fork.
Sprinkle with the pistachios.
Freeze until very firm, at least 3 hours.
To serve, cut or break into bitesize pieces.
Let stand at room temperature for 15 minutes before serving.

This is the perfect end to a summer barbecue or a really heathy and nutritious yoghurt based snack throughout the summer. Works with any berry you have available, also with frozen berries. For a nut-free version, remove the ground almonds and replace the pistachios with mixed seeds and oats for a bit of crunch!
