stewed apricots & plums
When fruit season is in full swing, let's take advantage of it! Having fruits as part of a healthy nutritious breakfast is a great way to kick start your day. This very simple apricot and plum stew is not only seasonal and delicious, it is extremely versatile. It makes a perfect crumble base, or a great topping for your morning oats or Greek yoghurt!
ingredients
10 plums, stoned and quartered
10 apricots, stoned and quartered
1 teaspoon vanilla extract
1 teaspoon raw honey
Knob of butter
method
prep time: 5mins
cook time: 30-40mins
In a sauce pan, add a knob of butter and melt gently
Add the plums, apricots, vanilla and honey
Stir and simmer gently for around 30mins until it turns into a nice chunky compote

Apricots are rich in beta-carotene, which helps to defend against oxidative damage caused by free radicals. Apricots also contain lutein, which appears to be able to protect the retina from damage caused by blue light.

Plums are very high in vitamin C and phytonutrients that provide powerful antioxidant protection. Dried plums (prunes) are also useful to help prevent or manage constipation. This is thought to be due to the phytonutrient Neochlorogenic acid which has been suggested to provide a laxative effect.
