Spicy garlic prawns pasta bowl
We all need a quick, easy and tasty pasta bowl in our repertoire. This is a balanced dish that you can prepare in 20mins. Prawns are a fabulous source of lean protein also low in calories. As I don’t tolerate gluten I have tried countless pasta alternatives to wheat and the brown rice pasta by Free Foods is the best for texture and the closest to standard pasta in my experience. I serve with a side salad.

300g raw shelled king prawns (fresh or frozen)
150g brown rice pasta
100g cherry tomatoes, quartered
100g baby spinach leaves
1 head of broccoli, cut into small florets
4 garlic cloves, finely chopped
2-3 tbsp fresh parsley finely chopped
1 red chilli, sliced
1 knob of butter
Olive oil
Salt & pepper
1 cup reserved pasta water
To serve
3-4 tbsp parmesan or choice of hard cheese, finely grated
Method
First, boil the pasta in salted boiling water according to packet instructions. Reserve one cup of pasta water.
Once the pasta is cooked through drain the water out.
While the pasta is boiling, cook the prawns.
While the pasta is cooking, sauté the prawns with melted butter until the prawns turn pink. Season with salt and pepper. Remove from pan, set them aside and cover.
In the same pan, add a little more butter and a drizzle of olive oil and sauté the garlic and chilli on low-medium heat for 5mins.
Add the tomatoes and cook for another 5minutes.
Add the spinach and broccoli.
Add the cooked pasta and add half cup of reserved pasta water.
Sprinkle with salt and pepper to taste.
Add the cooked prawns back in the pan and combine everything evenly.
Finish with olive oil and finely chopped parsley.
Transfer to serving plate and sprinkle grated cheese and parsley.

You can use chilli flakes instead of fresh.
