Oats & greek yoghurt berry bake

This bake is just like a breakfast bowl. Goodness and fibre from the oats, Greek yoghurt for the protein and all the berries because we love them so much. It is super simple and can be eaten cold or slightly warmed up with an extra spoonful of yoghurt, almond butter and seeds! You must give it a try.

 

ingredients

 

1 ¼ cups old-fashioned rolled oats
1 ¼ cups whole wheat flour
1 ½ teaspoons baking powder
½ teaspoon baking soda
¼ teaspoon salt
1 cup Greek yoghurt
¼ cup milk
2 large eggs
1 ½ teaspoons vanilla
½ cup honey
1/3 cup melted coconut oil
2 cups blueberries
Zest of an orange

Prep time: 5mins
Cook time: 45mins

 
  • Preheat the oven to 180°C and line an 8 x 8 inch pan with parchment paper and set aside.

  • In a large bowl, stir together the dry ingredients: oats, flour, baking soda, baking powder and salt and set aside.

  • In another bowl, whisk together Greek yoghurt, milk, eggs, vanilla, honey and melted coconut oil.

  • Then, add liquid ingredients mixture to the dry ingredients and stir until just combined (don’t overmix).

  • Fold in berries and pour the batter in the prepared tin, smooth the top and bake 45-55 minutes or until a toothpick inserted in the centre comes out clean. If the top starts browning too quickly, cover loosely with foil.

  • Cool in the pan, then transfer on a wire rack and cool completely or eat warm.
