Mango lassi and raspberry ice lollies

Mango and raspberries are always in my freezer. Fab ingredients for smoothies, but in the summer we make ice lollies and iced desserts! Based on a classic mango lassi recipe, the cardamom brings these flavours together beautifully. This recipe is made using Greek yoghurt but also works with non-dairy alternatives such as coconut milk/cream or almond milk. Once the ice moulds are full, enjoy the leftover as a smoothie.

Rolled oats are THE staple ingredient I run out of the most often! I use it for everything, savoury or sweet, breakfast or dinner!. High in fibre, naturally gluten free if you chose the right brand and so so versatile. If you have oats and bananas you can always make cookies! Yes, bananas are another twice weekly must buy on the shopping list . The base recipe for these delicious cookies is just the 2 ingredients. You can add your choice of extras (seeds, nuts of choc chips) and make a thumbprint in the centre ready for a jammy filling. Mango and coconut it is today!

Snacks are part of life for our busy active families. I don’t mean the ones you grab from the supermarket shelves or in a rush. We prefer making our own for the week ahead. These are a great quick and easy no-bake option and made with 6 real and wholesome ingredients only. Mango can be swapped for another dry fruit ( make sure they are just that, fruit and no sulphate or added anything) and cashews can be replaced with almonds or Brazil nuts if you have them in your cupboard. Using maple syrup make those granola bars vegan too if that’s important to you.

When the weather gets warmer we love nothing better than a smoothie for breakfast. It's light and refreshing. The problem with many of the smoothies or smoothie mixes from the freezer you can buy from supermarkets is they are really high in fruit not vegetables and there's no protein to keep you full. This has protein from the chia seeds, healthy fat from the flaxseed and a good mix of vegetables with a touch of sweet from the mango.

This colourful salad is perfect for lunch on a summer's day. It's ideal to serve on its own, but can also be served alongside a BBQ on a summer's day. It's very quick and easy to prepare leaving you more time to spend outside. I'm not usually that keen on adding fruit to a salad, but trust me – this really works!

Inspired by nature. Spring is on everyone's mind the minute the golden daffodils appear in gardens and across the countryside in the UK, and it also inspired this mango smoothie. Although not grown in this country, and always imported, mango is available all year round and is a great staple fruit to keep in your freezer alongside frozen berries ans frozen spinach.
