Hot honey air fryer salmon bites

I think I'm a little bit obsessed with these air fryer salmon bites! they’re such an easy and tasty salmon recipe that produces perfectly tender, bite-sized pieces of salmon for a quick midweek supper or to add to your bowls for a quick lunch on busy work or studio days!
They can be eaten hot or cold so they are great to make ahead!

One tray herby chicken leeks, fennel & potatoes

A perfect quick, easy and very tasty chicken one tray. I typically make this midweek in the evening, but it also makes a perfect no-fuss Sunday lunch for those not wanting to spend hours in the kitchen!
You can add different vegetables but fennel is so tasty and goes brilliantly with chicken and herbs. All round comfort food.

One pan salmon with harissa tahini dressing

A perfect quick, easy and very tasty one pan salmon packed with flavours. Main ingredients are very simple but elevated but a gorgeous harissa and tahini dressing which would also work with chicken. You can swap the vegetables with the seasons too. Easy to make for 2 or for a larger crowd. It is nutritious enough to serve on its own, but would work well served with lentils, brown rice or quinoa.

Lentil, beetroot & salmon salad bowl

The beauty of this lentil salad is its versatility! Some elements (lentils and salmon) can be added warm, and all can be made ahead or already in the fridge and cupboard so you can assemble this beautiful salad at the last minute. It makes a perfect starter for 4 or a balanced lunch for 2. The lentils and salmon provide a good source of protein and healthy fats to keep you full for longer. This can be made with any type of lentil - but I think those beluga lentils are perfect and sturdy for this salad. Second favourite to use are Puy lentils.

This super tasty salmon stir fry recipe is a perfect quick and easy midweek or friday night dinner. The miso marinade can be made ahead and also used with chicken. Stir fries are a quick delicious way to add a large variety or vegetables, colours and nutrients in your diet. This marinated salmon is also delicious served with steamed veggies and even eaten cold for lunch the next day with this asian style slaw.

Quick and easy teriyaki salmon

Salmon is a popular fish in our house - but when I add a teriyaki sauce then it’s even more popular. Rather than the traditional brown sugar found in teriyaki sauces I have swopped to a maple syrup - so it maintains its sweetness without adding any refined sugars. I marinade the salmon for 30 minutes - but if you are short of time then you can shorten to 10 minutes. I like to cook this with one large piece of salmon fillet. I ask the fishmonger for a piece to feed 6 as my teenage sons eat more than most adults!! I serve this with buckwheat noodles and stir fried vegetables.
