plum & berry chia compote
Who would say no to a better healthier breakfast, naturally sweet, nothing processed and so nourishing? Let’s all say yes and add this amazing fruit compote or jam to our food prep list! Only 5 minutes to prep and it will fill your kitchen with the sweet aromas or an old fashioned jam making kitchen! It is THE all round perfect breakfast partner to your overnight oats, porridge, or yoghurt topped up with nuts and seeds! Great with homemade waffles too!
ingredients
Makes 1 large jam jar
150g raspberries (fresh or frozen)
150g blueberries (fresh or frozen)
10 plums, stoned and quartered
Knob of butter
1 tablespoon raw honey
2 tablespoons chia seeds
method
prep time: 5mins
Cooking time: approx 1 hr
In a large saucepan, add a large knob of butter to melt
Add all the fruits to the pan and mix well
Add the honey and stir
Simmer for an hour, stirring occasionally
Remove from the heat, add chia seeds and stir
Leave to cool down
Transfer to a jar and keep in the fridge for up to a week

This recipe can be made all year round with frozen berries and topped with any additional seasonal fruit. In addition to the fibre and vitamin rich fruits, adding chia seeds provides an extra source of fibre, antioxidants and healthy omega 3 fats. Chia seeds have also been shown to help regulate blood sugar levels and lower blood pressure. Avoid having too many if you are on blood thinning drugs.
