Chipotle black beans burrito bowl
This quinoa burrito bowl is the most fabulous, easy, multitasking, super quick, delicious nourishing bowl. Perfect as lunch on its own or with added protein such as tuna or chicken. Ideal for your summer BBQ spread and a winner prepared ahead and taken to work!
ingredients
serves 4 -6
𝐒𝐀𝐋𝐀𝐃
2 cups quinoa, cooked
1 tin (400g) black beans, drained and rinsed
1 tin (300g) sweetcorn
1 cup tomatoes, diced
1 red onion, chopped
1 avocado, sliced
1 cup fresh coriander, chopped
𝐃𝐑𝐄𝐒𝐒𝐈𝐍𝐆:
2 tbsp greek yoghurt
2 tbsp olive oil
1 tsp chipotle paste or harissa
A splash of water
method
Prep time: 10mins
Mix all ingredients together in a large bowl and mix well.
Pour dressing and toss to cover evenly.
For extra protein, I like to add some leftover grilled or roast chicken, or beef.
