Yogurt, raspberry, beetroot energy breakfast
The sun's finally coming out to play, all my favourite berries are also coming into season so it's time to have fun with those gorgeous colours and make healthy food look pretty and attractive for the young and not so young alike! Offering a yoghurt and a few fruits to the kids for breakfast or dessert is great but they get bored! So choose a nice glass, cup or jar, and get creative with some nutritious layers! Here's what I did!
ingredients
serves 2
300g Greek Yoghurt
or
300g coconut yoghurt for a dairy free alternative (we use Coyo)
150g raspberries(fresh or frozen)
4 tablespoons concentrated beetroot juice (I always have BeetActive concentrate in my fridge. Available from Ocado or Holland&Barrett)
4 tablespoon of pumpkin seeds
4 tablespoon of low sugar granola
3 tablespoon water or coconut water
method
In a blender, add the raspberries, beetroot concentrate and water and blitz until smooth.
Set aside.
In a glass jar or large tumbler start layering with yoghurt.
Add granola & seed layer.
Add some of the rasberry-beetroot coulis.
Start all over again.
Top with extra seeds and raspberries
the health boost tip
This fun and beautiful combo works as a great breakfast you can prepare the night before and you could even add a little granola for extra crunch! My kids absolutely love this as a fun pudding on a summer's weekend at the end of a Sunday lunch!
Beetroot is rich in vitamin C, fibre and potassium and offers a fantastic natural boost to stamina and endurance. Walnuts are an excellent source of omega-3 essential fatty acids, and manganese important for supporting healthy bones.
