Smokey winter one-pot
This recipe is for all of you out there with foodie families and those who enjoy entertaining! We all need those one-pot recipes in our repertoire. Simple, yet delicious heart warming, ideal to prep in advance and…packed full of vegetables and all round goodness. Leave the chorizo out for a vegetarian option, serve with roast chicken or slow roast lamb for a winter’s cosy Sunday lunch.
ingredients
Serves 4-6
2 large sweet potatoes, cubed
1 aubergine, cubed
240g (1 tin) cooked chickpeas
1 large red onion, sliced
150g Chorizo, cubed
680g jar of passata
3-4 tablespoons Belazu Smokey Tomatoes
2 cloves of garlic, chopped
Olive oil
1 tablespoon ground cumin
1 tablespoon smoked paprika
method
prep time: 10-15mins
cook time: 1hour approx
In a large casserole dish, add 3-4 tablespoon of olive oil and heat up.
Add the sliced onions, smokey tomatoes, chorizo, garlic, cumin and paprika.
Stir on medium heat for about 15mins until onions coloured and it all forms a base.
Add the aubergine and cook for 10mins until soft.
Add the sweet potatoes cook for 10mins.
Add the passata and simmer for 20-30mins.
Add the chickpeas, adjust seasoning and simmer for another 10mins.
Optional: I like to add fresh spinach leaves, kale or chard along with the chickpeas for that extra dark leafy green goodness
