Coconut & berry bliss balls

These raw healthy snacks were inspired by the arrival of all the gorgeous summer fruits. Raw, nut-free, vegan, naturally gluten free, light and fresh they are the perfect pick-me up, on-the-go refuel for the longer days, late outdoors training session or delayed never-ending cricket matches! They are pretty, do not need baking and set in the freezer quickly, so what's not to like!

super easy breakfast egg in a pepper cup

These bell pepper egg cups are one of the easiest nutritious option to kick start your day. Breakfast is important but it doesn’t have to be the first thing you do in the morning. What is key to a successful first meal of the day though is that is has to be quick, easy, delicious and balanced. Protein content is key to fuel the day ahead and keep you full until the next meal. If you can also include your first portions of fruit and veggies it’s an absolute winner. Give them a go! They make a fab Sunday brunch item too! Just add a sliced half avocado.

Lemon & ginger energy snack

Not another snack requiring NO BAKING… said no-one ever! Whenever we are invited to talk at an event, be it a wellness event, nutrition talk or workshop at a school it seems most families struggle with choosing healthy snacks. They are not always necessary or even recommended, but when trying to manage a busy schedule and aspiring to a healthier regime it is really important to have the right balance of nutritious and flavoursome ingredients to keep us going. These snacks taste just like lemon drizzle cake!

raw cacao, orange & turmeric power balls

With all the talk and noise about snacking or not snacking, government guidelines not always suitable for all, what to do? As busy mums to active sporty kids, we prefer to make sure that if our children need to refuel between meals, we make nutrient dense homemade snacks available. These energy balls are nut-free too, so can be taken to school or the local sports club. And for those who like a strong boost, add extra turmeric, go on!!

Grab & go raspberry granola bars

The search for nutritious healthy snack bars is never ending. With the added restriction of the "nut free" policy in schools, making your own is the key to success. These bars contain oats and seeds, no nasties, no refined sugar and no nuts. These are really quick and simple to make ahead, and add to a packed lunch or your gym bag for a post-workout refuel.

mocha energy shot

These energy balls were inspired by, or should I say, commissioned by my Sweaty Betty team mates! They have been designed to be free from most of what we try to avoid or reduce and full of the flavour of that much loved coffee shot! They are a perfect made ahead item and were a massive instant hit at our Monthly meeting!

cumin chicken skewers

Children love food on sticks! This chicken has been marinated in yoghurt overnight which makes it soft and succulent - perfect for younger children who sometimes find breast meat hard work. My daughter says this is her favourite way of eating chicken breast.

black bean chilli

We like to include a couple of vegetarian or meat-free days in our week. This helps to keep the weekly food budget down and gives our digestion a rest from processing meat. This bean chilli is a perfect recipe for those meat-free days. It's great on its own, but could be served with some brown rice if you are particularly hungry. Leftovers are also great the next day for lunch. It's best prepared with dried beans - see tip below, but you can use tinned if you prefer.

quick and easy breakfast egg muffins

One of our number one nutrition tips is always to have protein with every meal and snack. The other is to try and add more vegetable portions daily. Breakfast is where most may struggle on both counts. With these egg muffins you’ll tick both boxes! Eggs are a great source of protein and you can add any type and colour of veggie you like! Perfect made the night before to eat on the go or once in the office. Can be eaten hot or cold and also ideal for lunch boxes or post workout snacks! Win Win!

carrot, apple & ginger flapjacks

These flapjacks were inspired by my daughter’s love of carrot, apple and ginger juice. The carrot and apple make them naturally sweet so there’s no refined sugar in these flapjacks, although I have used some maple syrup to sweeten further. We always try and add vegetables to as many of our dishes as possible and these flapjacks are a perfect example. Perfect for summer picnics or after school treats.
