Classic tuna niçoise salad

This has to be one of my favourite classics from my childhood. My grand parents lived in Nice and I have heaps of happy memories there…For some of you this may seem like a lot of ingredients to buy and prep but the beauty of this is that it is a perfect salad to make ahead in the summer to accompany a BBQ and the ideal meal to make once ( base) and eat 3 times for lunch with different protein on top. Perfect balance of mediterranean flavours, healthy plant diversity and healthy fats.

This Greek style salad bowl is a budget friendly crowd pleaser. It’s perfect made ahead for lunch boxes, taking to work etc… It’s also such a quick one to make and bring along to those summer BBQs to serve alongside grilled meats. Perfect balance of mediterranean flavours, healthy plants and fats.

Falafels are one of my favourite “street foods”. I first discovered them when was quite young travelling with my family in Israel. They are also a staple of Lebanese cuisine that I love so much. I have tried many ways to make them and recently read about making them using dry chickpeas rather than tinned and so I thought I’d share. Falafels are versatile, nourishing, and full of plant based protein goodness. Perfect for your vegetarian friends! The tahini dressing is simple, creamy and tasty.

Moroccan carrot and chickpea salad

North African classic flavours and spices have always been some of my favourites as I grew up with them. Harissa, cumin, sumac mixed with the sweet and sour of lemon and honey easily elevate a very simple, fresh and quick to rustle up salad that brings summer to your table. Give it a try. Also works really well if you add some grated beetroot.

With a busy hectic family life, managing time and meal planning is tricky. That's where your AGA or like me a “Crockpot” slow-cooker is a saviour several times a week. This shoulder of lamb is quick and easy to prepare first thing in the morning and will welcome you in the evening with warming spiced aromas and a healthy hearty family meal ready to serve, and hopefully leftovers for lunch the next day.
