Although we are not vegetarians we often eat vegetarian meals especially as we get a bit older. A vegetarian meal with puy lentils and mushroom is perfect for a midweek meal or meat free Monday meal. The mushrooms and miso paste hit the unami spot perfectly in this recipe. For a more substantial meal you could serve with some wild or brown rice - but it’s hearty enough without.
As the winter months hit I crave bowls of warming stews to nourish me. This can easily be made vegetarian with the omission of the bacon - but it provides a lovely smoky finish. This pleases both the meat and the bean lovers in our house as it caters for all. I have added lentils to this dish. If you have children that don’t like lentils then use the red ones as they disappear to nothing - the puy lentils are good if you have someone sensitive to lentils as less likely to cause bloating issues. Likewise with the beans choose your favourites - although the darker ones such as black, kidney and aduki work best.

This is a lovely hearty salad with lots of protein so great if you need to refuel after a bout of exercise. Quinoa is a great vegetarian protein source as it contains all the amino acids needed by the body.
This might not be a salad in the traditional sense since it’s warm - but as the months turn cooler, adding warm elements to your salad makes sense. This is how I prefer to eat my salads in the autumn and winter. Sometimes I add just one warm element - or in the instance of this salad I have added a couple - including a spicy kick that’s guaranteed to warm you through.
When the weather gets warmer we love nothing better than a smoothie for breakfast. It's light and refreshing. The problem with many of the smoothies or smoothie mixes from the freezer you can buy from supermarkets is they are really high in fruit not vegetables and there's no protein to keep you full. This has protein from the chia seeds, healthy fat from the flaxseed and a good mix of vegetables with a touch of sweet from the mango.
This fresh tasting mint smoothie is the perfect accompaniment to a summer weekend breakfast or a mid morning pick me up. We have made it sweet to appeal to children as well, but if it's only for you, then you might find that one pear, or even none, will do. There's no protein in the smoothie so it's not a substitute to breakfast. If you want to eat on its own then include a handful of almonds in the smoothie.
