There is absolutely a place for cookies in our lives! Even those like me who tend to go for savoury before sweet when hungry, there is something about those cookies that is just so delicious. Super quick to put together and with a better protein content than most shop bough cookies! What’s not to like?
Dark chocolate, nut butter and medjool dates! 3 wholesome simple ingredients only and this fudge is unreal! Of course it is high in sugar (the dates) and calorie dense (nut butter) but if you’re going to treat yourself, do it with real food ingredients you know and recognise!
My tip? Cut into small squares. Go on, have a go and let me know!
At the Health Boost we are not vegetarian but we encourage everyone to increase the consumption of mostly plant based meals a couple of days a week if possible. With some pulses providing some good quality protein such as the quinoa and chickpeas in this salad and the added halloumi we make sure to provide a balance of all macro nutrients. We also get asked often what to do with aubergines as they are a good source of fibre, vitamins and minerals and low in calories for those counting.
Good old fashioned oat cakes are so so delicious and versatile. They are also super easy to make, as a batch and keep. With the main ingredient being pinhead oats (or steel cut oats) they make the perfect high fibre savoury snack teamed up with our smoked mackerel pâté or French sardine pâté. Another French way to enjoy those is with a little butter, some sliced radishes and a little salt. I like to vary the herbs or spices I mix in them; I have tried and tested rosemary, oregano, garlic, turmeric, curry powder, cumin and paprika. If you want to have them with cheese, I recommend to stick to herbs.
Life without the occasional brownie is not for me! For that reason, I love trying to play with swapping and replacing ingredients for those with a better nutritional value. For these brownies I have not used refined white or brown sugar but instead opted for medjool dates. You would honestly not notice the difference. But I will let you be the judge of that…Go on, have a go and let me know!
This is hand on heart the easiest flatbread you can make and it’s naturally gluten-free! Socca is a traditional French dish from Nice where I partly grew up. It was probably my favourite street food. Cooked on very hot grills, they were usually served in a cone of brown paper with a sprinkling of coarse sea salt and pepper, maybe thyme or rosemary. It it was one of those South of France classic for which everyone has their own technique for cooking, but the ingredients however are pretty much always the same: equal parts chickpea flour and water, add olive oil, that’s it. That simple!
Nut allergy sufferers stay away! I’m afraid these slices are made almost entirely from nuts in natural, butter, oil and flour form. This kind of snack is my absolute heaven. I love nuts, all of them and I love a sweet and salty treat. However, I would recommend moderation as they are very calorie dense. They are gluten free, packed with good fats and contain no refined sugar so much better than any of the shop bought industrial plastic wrapped processed snack you can buy on the high street. Sure to satisfy a sweet craving without the nasty ingredients!
Similar to another one of our recipes but even easier. They are the perfect recipe to hand over to the kids so they can make by themselves. Limited ingredients, all done by hand, no knife needed, minimum mess to clear up…just perfect. They are also best eaten straight out of the oven!! Ideal activity and treat rolled into one for when kids are at home with friends!
Cookies are not just delicious to eat, they’re such a joy to re-invent creatively! I like playing with the base ingredients, extras, and adjust with the seasons. These are flourless, naturally gluten free and contain no refined sugar. They are best eaten warm straight out of the oven and shared obviously!
Family life would not be the same without cookies! So I’m always trying new ingredients and combinations. But today this is just one of those healthy classic options that I keep re-inventing. Quick and easy, delicious, perfect for the kids to make themselves. What’s not to like! Perfect healthy snack for school pick up before heading to sport clubs!
If you have never tried a savoury crumble, now is the time with this recipe! This is a fun, really quick and easy vegetarian meal you can put together in the evening for kids. It can be used as a side or as a main dish. Add Oregano as you herb of choice and it will taste like a pizza! Add olives and Herbes de Provence and you’ll find yourself in sunny South of France. I’ve had massive thumbs up and great success with kids with this recipe and you could turn it into a pick and mix where kids make their own veggie choices and share the crumble topping in individual dishes!
This is hand on heart the easiest most delicious bake you could ever make ahead and keep for a healthy and balanced lunch.
Growing up, in France, I probably had something like this once a week! The flavour combinations are endless, vegetarian or not, you can go with the flow of seasonal veggies, add spices and even play around with flours. What’s not to like? My favourite is olive with anything.
This very easy gazpacho is all about enjoying and embracing summer ingredients. Full of gorgeous mediterranean vegetables and flavours, totally refreshing and perfect to make in advance. No cooking is involved and pretty much any blender will do the job. Just make sure you allow a couple of hours to refrigerate it. An absolute keeper to make again and again as a starter on a summer’s evening.
Enjoying and embracing a balanced healthy diet means there is a place for everything and that’s exactly why a good pasta recipe or two is essential for those weekends when comfort food and family crowd pleasers are required. The base for this is vegetarian and full of gorgeous mediterranean vegetables and flavours and so a little chopped chorizo works wonders added to it.
