Easy summer tomato gazpacho
This very easy gazpacho is all about enjoying and embracing summer ingredients. Full of gorgeous mediterranean vegetables and flavours, totally refreshing and perfect to make in advance. No cooking is involved and pretty much any blender will do the job. Just make sure you allow a couple of hours to refrigerate it. An absolute keeper to make again and again as a starter on a summer’s evening.
ingredients
serves 4
4 large tomatoes
1 red onion, chopped
Handful of fresh mint
2-3 cloves garlic, chopped
1 cup/30ml water or vegetable stock
2 tablespoon extra virgin olive oil
1 tablespoon apple cider vinegar
1 tablespoon freshly squeezed lemon
Salt and black pepper
To stir in (optional)
1 medium tomato, diced finely
1/2 cucumber, diced finely
1/2 red pepper, diced finely
1/2 red onion, diced finely
method
prep time: 20mins
Clean and chop all vegetables
In a blender add the tomatoes, red onion, mint, garlic, water/stock, lemon juice, olive oil and vinegar
Blend until smooth
At that stage, if using, add the finely diced tomatoes, cucumber, pepper and onion
Keep in the fridge to chill for at least an hour
Adjust seasoning
Serve chilled
