red pepper, parsley and feta omelette
Omelettes or frittatas are your friends! They can be breakfast, brunch, lunch and can be eaten hot or cold! Eggs are a great natural, simple, complete and affordable source of protein teamed up with any seasonal vegetable you may have to hand. An omelette takes 5 minutes to make for a quick lunch at home. Made ahead, they are ideal cold in a wrap with extra salad leaves.

A bunch of fresh flat leave parsley
1 red bell pepper
5 eggs
100-150g Feta, crumbled
2 tablespoons olive oil
Salt & black pepper
method
prep time: 5mins
cook time: 15mins
Wash and chop peppers and parsley
In a large bowl, add the eggs and mix well
In a large frying pan, add the olive oil and chopped pepper
Sauté until slightly soft
Pour the egg mixture over the peppers
Scatter the chopped parsley
Keep cooking on medium until egg mixture is cooked through
Near the end, scatter the crumbled feta
Slice and slide onto a plate
Serve with extra mixed salad leaves
Also delicious with some kimchi or pickled red onions
