Harissa, chickpea and apricot lamb koftas

When it’s all about meal planning, food prep and making sure you have good nutritious home cooked food ready when you need it, these are perfect to make all year round. Quick and easy to assemble with no blender or processor, these lamb koftas can be served with a side salad or some quinoa and steamed greens. I like to serve them with a side of cumin and parsley yoghurt.

 

ingredients

makes 8

 

400g lamb mince
Handful unsulphured dried apricots, chopped
1/2 can chickpeas (drained)
1-2 tablespoon harissa

To serve:
2 tablespoon natural yoghurt
1/2 teaspoon cumin seeds
1 tablespoon fresh parsley, chopped finely

 

method

prep time: 10mins
cook time: 25-30mins

 
  • Preheat oven to 190°C.

  • In a large bowl, add the lamb mince, chopped apricots and chickpeas and mix well with a fork.

  • Add the harissa and mix well with your hands.

  • With your hands, start forming the kofta in sausage like shapes, or meatballs if you prefer and set aside.

  • I like to use metal skewers to cook them in the oven as they help distribute the heat through the meat and speed up the cooking process. But you can just lay them flat in a baking pan.

  • Slide the skewers in the over for 25 to 30 minutes until nicely coloured and cooked through.

  • To serve: mix yoghurt, parsley and cumin seeds.

Storage

Keep in an air tight container in the fridge for up to 2 days.
Can be eaten cold or reheated.

 

the health boost tip

This recipe is so easy and delicious. Up to you if you’d like them shaped into meatballs or even burgers.
If you’re not a fan of chickpeas, you can whizz them in a food processor first and add to the meat mix.
Make them ahead and serve in a pitta bread or flat bread with lots of salad.
In the summer, ideal to grill on the BBQ and share with friends.
