cauliflower, lentil & turmeric soup
You can never have enough soup recipes and this one hits the spot. Protein from the lentils, lots of cruciferous vegetable goodness from the cauliflower with the warming undercurrent of anti-inflammatory turmeric.
ingredients
serves 4
1 tablespoon olive oil
1 large onion, sliced
2 cloves garlic, crushed
15g fresh turmeric, peeled
1 cauliflower, cut into florets
80g red lentils, washed
1 litre chicken or vegetable stock
black pepper
method
prep time: 20mins
cook time: approx 25mins
Heat the olive oil in a large saucepan and gently fry the onion for 8 minutes.
Add the crushed garlic and continue cooking for another 2 minutes.
Add the turmeric, cauliflower, lentils and stock.
Bring to the boil and simmer for 20 minutes until the lentils and cauliflower are cooked.
Blend everything and add a good serving of black pepper.

The black pepper in this dish is important so don’t forget to include. Studies have shown that the piperine in the black pepper helps with the absorption of the curcumin in the turmeric. Curcumin has been found to have anti-inflammatory, antioxidant and disease-fighting properties.
