Broccoli, edamame and chickpea salad

Broccoli, edamame and chickpea salad

A high protein salad with the added benefit of broccoli, a cruciferous vegetable that supports liver and hormone health. I always stock green beans and edamame beans in the freezer as quick options to add to dishes.

ingredients

serves 1

100g broccoli, cut into florets
100g green beans
100g edamame beans
200g chickpeas
100g feta cheese
1/2 avocado
1 tbsp of mixed seeds such as sunflower and pumpkin

method

prep time: 30 mins

  • Preheat oven to 180°C.

  • Add the broccoli, green beans and edamame to a steamer and steam until cooked.

  • While the greens are cooking place the chickpeas in a bowl and cover with a little olive oil and 1/2 tsp of paprika. Place these in a tray in the preheated oven or an air fryer to crisp up.

  • When the greens and chickpeas are cooked assemble all the ingredients into a bowl.

  • Serve with a drizzle of French Dijon dressing.

the health boost tip

Cruciferous vegetables such as broccoli, cabbage, cauliflower, kale and Brussel sprouts are your best friend vegetables in midlife and ideally a portion should be consumed every day.
