roasted brussel sprout salad with halloumi
A warm salad for those colder months made with roasted Brussel sprouts to keep it seasonal. This salad comes in at over 40g of protein and 14g of fibre so will leave you full until the next meal and your blood sugars balanced well.
ingredients
serves 1
200g brussel sprouts
100g quinoa
200g chickpeas
1/2 onions
75g greens, kale or cavolo nero
1 Tbsp harissa paste
100g halloumi cheese
method
Preheat the oven to 200°C.
Add the sprouts, chickpeas and red onion to a small baking tray.
Coat in the harissa paste and add to the oven.
Cook for 15 mins and then add the greens and halloumi.
Stir everything together and slide back into oven to cook for another 5 mins until the halloumi is golden.
Meanwhile cook the quinoa according to packet instructions(or use pre-cooked quinoa pouch for ease)
Serve warm during the colder months.
