Tahini and ginger zingy dressing

Tahini and ginger zingy dressing

A lovely nutty salad dressing that’s lifted with the tang of the Dijon mustard. Pairs perfectly with a robust grain salad or roasted vegetables. If left to sit it might thicken up, so just loosen again with a splash of water.

 

ingredients

 

2 tbsp tahini
1 tsp grated ginger
1 lemon, juiced
1 tsp Dijon mustard
Splash of water

 

method

 
  • Add all the ingredients to a small bowl and whisk until combined.

  • If you store your ginger in the freezer, then when you grate it won't be all stringy! Can be grated straight from frozen.

  • Use immediately or store in an airtight container for up to 2 days.
