Tahini and ginger zingy dressing
A lovely nutty salad dressing that’s lifted with the tang of the Dijon mustard. Pairs perfectly with a robust grain salad or roasted vegetables. If left to sit it might thicken up, so just loosen again with a splash of water.
ingredients
2 tbsp tahini
1 tsp grated ginger
1 lemon, juiced
1 tsp Dijon mustard
Splash of water
method
Add all the ingredients to a small bowl and whisk until combined.
If you store your ginger in the freezer, then when you grate it won't be all stringy! Can be grated straight from frozen.
Use immediately or store in an airtight container for up to 2 days.
