One pot creamy coconut chicken

You can’t beat a creamy chicken and this one is dairy free as well as being gluten free and low carb. It’s quick and easy and low washing up with just one pan used. I use the handy little 240ml pot of chicken stock from Osso which I get from WellEasy so reduced in price from the supermarkets. I also get my coconut milk from there.

Lentil and black bean bolognese

You can still enjoy a vegetarian version of the classic bolognese sauce. I use a lentil pasta which is high in protein (100g = 26g of protein) for added satiety. The addition of rosemary and balsamic vinegar are essential to the moreishness of the dish so don’t leave out. For a low-carb option you could serve with courgette or cauliflower rice.

Halloumi and butter bean bake

This is a very versatile vegetarian dish. you can add more chilli if you like heat and can change the beans around to whatever you have or use chickpeas instead. Did I also mention it’s super quick to make and can be on the table in less than 30 minutes. Makes a warming lunch or even an evening meal. Can serve on its own or with a slice of crisp sourdough.

Quick and easy French asparagus soup

When you love asparagus, the season is not really long enough, so I really try and come up with new recipes to include them at least a couple of times a week. This new recipe could very quickly become a seasonal staple for my family. It is quick to prepare, nutritionally balanced, can be adapted, can be eaten hot or cold, makes a perfect picnic or lunchbox item and when cut into squares it's a great finger food for the younger ones. What are you waiting for? 

Watercress and wild garlic soup

This is a such a super quick and easy soup that is spring in a bowl. Wild garlic grows in March and April in shady, woody and wet environments. The smell will probably hit you before you see it. If you are in doubt rub the leaves between your fingers. If you don’t smell garlic then leave well alone.

mild curried vegetarian chickpeas

I came up with this recipe during Lockdown. My daughter was getting fed up with the amount of meat her brothers were demanding at mealtimes and was begging for some vegetarian meals. Although the title states curried, this is a very mild flavour as my daughter doesn’t like super heat - she’s more of a masala girl! It’s super quick to make and so can easily be rustled up alongside other meals. You can eat this on its own, or add some brown rice for a slightly more substantial meal.

Berries & coconut nice cream

That sweet taste of summer... Yes I am talking berries and ice cream combination in any way possible!! Except that this ice cream has no milk! It’s the power of the humble banana striking again. We always have bananas in my house, fresh in the fruit bowl for those quick energy refuel moments. I also usually have some sliced frozen bananas in my freezer to add to smoothies or make this nice cream. Once you’ve done this one…do experiment with your favourite flavours!

So incredibly easy to throw together, this bowl is such a quick, simple and delicious dinner for 2 or a crowd pleaser for a dinner party. Packed full of bright, colourful, zingy and nutty flavours, since making it for the first time I have come back to it serving it cold as a starter or warm as a main, perfect for a Friday night with friends. Despite being quite simple to prepare it wows every time with its exotic asian flavours. I have made it with prawns here but panfried salmon works brilliantly too.
