One pot creamy coconut chicken

You can’t beat a creamy chicken and this one is dairy free as well as being gluten free and low carb. It’s quick and easy and low washing up with just one pan used. I use the handy little 240ml pot of chicken stock from Osso which I get from WellEasy so reduced in price from the supermarkets. I also get my coconut milk from there.

Mushroom and herb frittata

This is one of my favourite breakfasts - packed with protein and healthy fats to keep me full for hours. You can use whatever mushrooms you have to hand and any soft herbs. I will choose the herbs depending on what is available in my herb garden. Parsley and chives work particular well together in this frittata.

30mins dairy free mushroom soup

My husband loves a creamy mushroom soup - but we’ve recently discovered an intolerance to dairy so he’s gone dairy free. I have used some coconut milk to give this a creamy feel - but it doesn’t taste too coconutty as I’ve balanced with tamari sauce. You can blitz this smooth - or leave a little chunky it’s up to you.

buckwheat and mushroom risotto

During the winter months we need warming comfort food and a risotto is perfect. This is lighter than a traditional risotto and uses buckwheat groats rather than a risotto rice. Buckwheat is a seed that is related to rhubarb and is naturally gluten free. See the tip below for the health benefits of buckwheat. This risotto is made with mushrooms. In the photo I have used chestnut, but use any kind you can find - a packet of mixed wild mushrooms if you can find would be perfect.

This is a perfect dish when you want a vegetarian meal that looks a bit special. Can easily be doubled to provide a meal for four if needed. It’s very easy to make, but still looks impressive. While Val, the French half of The Health Boost is all about blue skies, hot sun and Mediterranean flavours, I am a huge fan of Autumn. Cosy jumpers, snuggling under a blanket, log fires and slow cooks, stews and spicy curry. Well to me this wild mushroom curry sums up those Autumn flavours. So easy to make and totally delicious. Eating out of a large bowl in front of a log fire while wearing a cosy jumper is optional! While most of our recipes are suitable for families my children won’t even touch mushrooms so this only serves 2.
