Gluten free no flour zesty muffins

Because life is all about balance and enjoying real good food, I decided to give the classic muffin a little Health Boost twist. The kids requested two different flavours – Lemon and poppyseed and choc-orange. I accepted the challenge and this recipe is for 12 light and fluffy muffins – 6 of each flavour. I have used ground almonds instead of flour and raw honey as the sweetener.

What I am writing about today is not a rant, not a judgement, not scientific just an account of my very personal experience with food sensitivities over the past 10 years. With access to information facilitated by technology, and the rise of fad diets, health trends and fancy buzz words spreading across social media, I sometimes find myself facing harsh criticism and negative reactions when I ask about the gluten content of my order when eating out.

This salad uses cauliflower rather than a grain or rice to create a substantial salad that can be eaten on its own or added to a buffet table of other salads. It's best not made the night before as cauliflower when cut and left produces a sulphur smell. If you do store in the fridge make sure it's got a lid on!
