Top tips for eating well on a budget

With food bills estimated to have gone up at least 8% in the last few months due to the spiralling costs on fertiliser, energy and feed, we thought some tips on eating well on a budget might help. Unfortunately our food bills are likely to increase even further in coming months as the energy costs are filtered down to us, the consumer. The biggest increases in prices as I w rite this comes from meat and fish which have gone up 22%, while fruit and vegetables have gone up around 14%. Shopping smarter has never been more important.

These bell pepper egg cups are one of the easiest nutritious option to kick start your day. Breakfast is important but it doesn’t have to be the first thing you do in the morning. What is key to a successful first meal of the day though is that is has to be quick, easy, delicious and balanced. Protein content is key to fuel the day ahead and keep you full until the next meal. If you can also include your first portions of fruit and veggies it’s an absolute winner. Give them a go! They make a fab Sunday brunch item too! Just add a sliced half avocado.

Puy lentils with chorizo and Dijon mustard

These French Puy Lentils are a staple in my house just as they were in my Grand mother's kitchen in Burgundy growing up. Quick and easy to prepare, they don't need to soak and cook in just 20 minutes. They are a great protein packed alternative to meat, rice or potatoes and are incredibly versatile, enjoyed hot or cold as a base for a salad. Chorizo and Dijon mustard is our favourite way to cook them, but get creative with them and enjoy!

One of our number one nutrition tips is always to have protein with every meal and snack. The other is to try and add more vegetable portions daily.
