protein packed lentil and edamame bean salad
A nutritious high protein and high fibre vegetarian salad. This contains around 30g of protein and a whopping 15g of fibre which is half your recommended daily amount.
ingredients
serves 1
100g cooked lentils
75g edamame beans
50g cucumber
40g red pepper
30g grated raw beetroot
10g shelled hemp seeds
10g pumpkin seeds
Large handful of rocket
Dressing
40g Greek yoghurt
1 tbsp lemon juice
1/2 tsp ground cumin
1/2 tsp Dijon mustard
method
Cook the lentils and edamame beans according to packet instructions.
Add all the salad ingredients to a bowl.
Whisk all the dressing ingredients together in a small bowl.
Top the salad with the dressing and enjoy.
