mint & cashew rack of lamb
At The Health Boost we love our food of course, and we love to keep it simple with few ingredients without comprising on nutrients, quality and flavours. This simple lamb recipe is just that. A handful of ingredients carefully picked, local, fresh and easy to assemble for maximum effect and foodie pleasure.

Serves 4
Rack of lamb (8 cutlets)
100g cashew nuts
large handful of fresh mint
1 tablespoon avocado oil
2 cloves of fresh garlic chopped finely
Sea Salt & fresh black pepper
method
prep time: 15mins
cook time: 30 minutes
Preheat the oven to 190°C
Soak the cashew nuts in water for about 30mins
In a food processor, blitz together the mint, cashew nuts and garlic
Slowly add the avocado oil while still blitzing
Season with salt and a few turns of black pepper
In a large frying pan or griddle, place the lamb rack, fat side down, over medium to high heat, to allow the fat to crisp up and turn a golden colour.
Repeat on all sides, about 1 minute each side
Place lamb in a tray, fat side up
Pack the mint and cashew mix onto the lamb
Place in the oven for about 10-12 minutes
Serve with a simple chickpea salad and griddled vegetables
