Healthy Mexican-inspired omelette
A spicy protein-packed breakfast or brunch that will keep you full for hours. For even more protein it’s also delicious with some feta cheese sprinkled on at the end. A great low-carb start to the day that helps to keep you full and balance blood sugars.
ingredients

1 tablespoon of olive oil
2 large tomatoes
1 spring onion
1 teaspoon jalapeño peppers
2 eggs
salt and pepper
method
prep time: 10 mins
Heat olive oil in a small frying pan
Chop the tomatoes and spring onions and fry over a gentle heat until juices start to dry up.
When cooked add the jalapeño peppers and stir to heat through.
Place the tomato mix into a bowl while you cook the omelette.
Whisk the eggs with some salt and pepper and place in the frying pan.
Cook over a gentle heat until the eggs are cooked.
Add the tomatoes to one side of the omelette and then fold over.
Add a sprinkle of coriander (optional).
