herb and smoked salmon omelette
A protein-packed breakfast or brunch that will keep you full for hours. This is a useful breakfast to have when you know you are eating a later lunch. Also makes an ideal lunch - serve with a side salad for more nutrients in that case.
ingredients
serves 1
2 eggs
1 tablespoon of chopped soft herbs such as parsley chives, thyme, tarragon or mint
1 knob of butter
50g smoked salmon
salt and pepper
method
prep time: 10 mins
Chop the herbs finely.
Add the eggs to a small jug or bowl and whisk lightly.
Add the herbs and the salt and pepper.
Add the butter to a frying pan and when melted add the whisked herb/egg mix.
Cook over a gentle heat until cooked through.
Add the smoked salmon to the top and fold the omelette.
