courgette and tomato frittata
This is a perfect blood sugar stabilising breakfast/brunch or lunch. Hey you could even rustle it up for an evening meal as well. Eggs work so well as stabilising blood sugar levels as they are full of protein with some fat too.
ingredients
serves 1
knob of butter
3 eggs
1 tablespoon of parmesan cheese
1 courgette
10 cherry tomatoes
1 teaspoon of dried herbs (basil, provence or oregano all work well)
salt and pepper
method
Crack the eggs into a small bowl or jug, add some salt and pepper and grated parmesan cheese and whisk gently with a fork.
Melt the butter in a shallow frying pan.
Cut the courgette into quarter slices and the cherry tomatoes in half.
When the butter has melted add the courgette and fry over a gentle heat for a few minutes.
Add the cherry tomatoes for a few minutes.
Add the eggs and sprinkle with the herbs.
Move the eggs gently to ensure all the egg is cooked.
You could finish off in the oven or under the grill which puffs it up slightly.
