high protein asian salmon salad
A high protein Asian inspired salad which is super easy to prepare and cook. I cook my salmon in the air fryer as it is done in minutes - but you can cook the salmon in the oven if you prefer.
ingredients
serves 2
1 tbsp rice vinegar
1 tbsp tamari (or soy sauce)
1 1/2 tbsp sesame oil
2 salmon fillets
2 large handfuls salad leaves
1/2 cucumber, sliced or cut into ribbons
150g edamame beans (frozen)
4 large radish, sliced
2 spring onions, sliced
2 tsp sesame seeds
method
prep time: 15 mins
Cook the salmon fillets. You can do this in an air frier, oven or fry on a hob with 1/2 tbsp of the sesame oil.
Combine the rice vinegar, 1 tbsp of sesame oil and the tamari (soy sauce) in a small bowl and whisk to combine.
Cook the edamame beans as per packet instructions.
Place the salad leaves on top plates.
Top with the cooked salmon.
Arrange the edamame beans, cucumber, spring onions and radish around the salmon.
Drizzle with the dressing and sprinkle sesame seeds on top.
